We have some ideas on how to make this more like pork bacon, but for now, this is our go to for BLTs and any other dish that requires crispy bacon. It has everything but the silky fattiness that makes bacon such a unique ingredient. The end product is smoky, salty, and crispy, with a hint of sweetness. Turn pan upside down and drop meat on oven rack. Chill overnight or place in freezer for 3 hours. Heat a couple tablespoons olive oil in a large sauté pan over.
